Luxist - Casa Noble: Driving More Refined Tequila Consumption
Tequila seems to have to fight for respect more than other spirits, such as whisky, rum, brandy and even vodka. Perhaps it's because Tequila seems to be more associated, in the U.S. with benders and beach parties rather than snifters and sommeliers.
But one of the small-volume craft Tequila producers helping to raise Tequila's image beyond the margarita is Casa Noble, a brand whose history dates back to the 1700s.
Casa Noble, which produces about 150,000 litters of Tequila of different ages each year, produces from a holding of about 3,000 acres of blue agave, about one-tenth that of Tequila giant Jose Cuervo (curve also buys blue agave from other growers). And Casa Noble's blue agave fields are mostly on slopes and hillsides, which stresses the plant, and the company believes produces a more complex tasting agave plant.
Another difference in Casa Noble's process to set it apart is the three distillations to which it subjects its spirit--traditionally, Tequila is distilled twice.
If the taste of Casa Noble's Tequilas seems deeper and slightly more complex than other brands, one of the reasons, says owner Jose "Pepe" Hermosillo, is the slow cooking of the blue agave "pineapples" before the juice is extracted. Some larger scale Tequila producers cook the agave in just six to eight hours in an autoclave, which works like a pressure cooker. Hermosillo compares the 36 hours or so of slow cooking in stone ovens to slow-cooking beans overnight in an iron pot versus using a pressure cooker. "Anyone can tell you the slow-cook method imparts a deeper, slightly smoky and sweet flavor that you can't achieve in fast cooking."
The majority of all reposado (aged Tequila) is aged in second-fill American Bourbon barrels. But Hermosillo says the charcoal on the inside of Bourbon barrels is too much for the flavor profile he is going for. Casa Noble uses new French oak barrels with a very light char on the inside. The distillery's Anejo Tequila spends two years in the barrel before bottling. Casa Noble Black spends five years in oak.
Tequila that is to become Anejo (minimum 1 year aging) goes into new casks. The Reposado (2 months to 1 year aging) goes into refilled casks. (More often at other distilleries, they will use newer casks for Reposado Tequilas and older ones for Anejo so that the wood affects the spirit more in a shorter time for the Reposado.) They refill the casks for Reposado 7 to 8 times.
It's important to remember that one year of aging in the Jalisco region of Mexico where all legitimate Tequila comes, is like five years of aging in Scotland because of the much warmer climate in Mexico. Indeed, most distillers say more than nine years of aging, unless it is done in hyper-controlled temperatures, sends the Tequila over the edge with too much wood in the flavor profile and mouth feel.
Casa Noble is also certified organic, the second brand in Mexico to receive the certification. That means it employs no fertilizers or chemicals in the cultivation of its blue agave, or in its distilling process. The distillery also has a treatment plant on site to render the waste liquids and solids as either useful compost or ph balanced liquid that won't foul the soil.
Fermentation of the agave liquid before distillation takes place with yeast as well naturally occurring yeast from the many fruit trees surrounding the cassia Noble hacienda and still house. Mango, lime, lemon and orange trees surround the quaint compound of buildings. This process is far preferable to the method of aiding fermentation in the 19th and early twentieth century: un-bathed workers swimming around the vats of liquid imparting their sweat and even urine to the mix.
Hermosillo believes that the U.S. market, the biggest for Tequila, is changing, and moving toward craft brands like Casa Noble. "As crafted Tequila like ours has entered the scene, more people are open to drinking Tequila on its own, in a nice glass, and experience the flavors and character...not just as a shooter or in a margarita."
Casa Noble was the first silver Tequila to get a double gold medal at the World Spirit Competition and was selected Best Tequila in Mexico by the Mexican Tequila Academy.
Here is the breakdown of Casa Noble Tequila expressions:
• Crystal (Silver) Tequila--$40: Tastes of minerals, white and red pepper, cinnamon, ripe mango, floral agave. Rounded and balanced flavor and finish. This is the un-aged 100% blue agave spirit.
• Reposado Tequila--$50: Aged for one year in French oak, the already excellent "bianco" takes on notes of vanilla,white chocolate and marzipan from the barrels.
• Anejo Tequila--$60: Aged for two years in French oak, the taste and finish here has added spice to the flavor profile of the Reposado.
• Single-Barrel Tequila $70-$100: Casa Noble ages its single-barrel Anejo five years, ($100) and two years for the single barrel Reposado ($70). The Anejo is especially complex with notes of dried fruit, butterscotch, vanilla, dark chocolate, brown spices, and smoky wood.

Upon entering the celestial-themed Sunset Ballroom at the stunning Beverly Hills Hotel, the Casa Noble Tequila tasting there would appropriately prove to be a heavenly experience. The presentation was informative and sensory, providing us lucky samplers with an array of sights, smells and of course.. taste.From the first sip of the Crystal Tequila, it was clear that the makers of Casa Noble knew what they were doing. The shimmery liquid spun easily around the glass unlocking aromas of mango, citrus and Agave with a slight hint of pepper. Surprisingly, the initial taste was very smooth and somewhat mild. Within seconds, however, the full flavors of this bright gem hit the pallet with an unexpected burst of buttery spice finishing in a crisp bold finish. In other words, it's an unassuming and stimulating treat for any Tequila lover and would take any margarita to the next level. Casa Noble’s Crystal won Double Gold medals at the San Francisco Spirits competition.
The Reposado, glimmering in amber light with hughes of sparkling copper, awaited my next sip. The aroma was distinctly that of the French White Oak that it rested in for 364 days. Its smell alone was intoxicating and inviting. The essences of vanilla and honeysuckle seemed to dance in the air along with the Oak, coupled with the distinct hint of fine Agave. With my senses tingling, my mouth was ready. At first contact, the flavor was bold, bright and buttery. Instantly my mouth was in a whirl of sensations, that finished with a smooth, warm tapering of caramel and spice. It left me a bit flushed, with a desire for more. An elegant experience that proved to shine in quality and taste.I was then curious to explore the organic blue Agave sample on the table that resembled a piece of turkey jerky. I've never actually touched Agave in it's raw form, and was surprised by it's opaque mahogany color. Its taste was semi sweet, with a chewy consistency that I only briefly experimented with. It was explained that organic Blue Agave are harvested at their peak flavor which is between 10-12 years, and are grown in the most ideal and organic conditions to provide the highest caliber of Tequila. Casa Noble has been producing superior Tequila along the hillsides of Jalisco, Mexico on their private family estate since 1776. This estate encompasses over 6,500 acres of land and hosts more than one million Blue Weber Agave plants. This fascinates me and I was truly impressed by their family lineage that was now presented before me in fine crystal.
Last on the list, but certainly not least, was the Anejo, aged for over 5 years in French White Oak Barrels. This golden gem, swirling slowly, released soft and subtle tones of butterscotch, toasted oak and teased my nose with overtones of cocoa and lime. Gently sipping, my palate welcomed the intense marriage of charged butterscotch, bright citrus and bold vanilla that went down like liquid velvet. The aftertaste was surprisingly light, with a sweet and oaky finish that left me with a smile on my face. The Anejo was my personal favorite of the three, but it was difficult to choose between these award winning spirits. Casa Noble’s Anejo also won Double Gold medals at the San Francisco Spirits competition.

What a great bouquet! The nose on the blanco ("Crystal") is nicely balanced between vegetal and sweet. After allowing it to breathe it blooms with notes of ripe mango, floral agave, and a subtle chocolate-like scent. Casa Noble is triple-distilled, and therefore very soft upon entry. The agave upstages a mild peppery zip that is not at all astringent. It nibbles but doesn’t bite, allowing an appreciation of this complex, fresh-tasting blanco that’s packed with flavor: agave, citrus, and even a little butter and asparagus. It approaches bitterness but veers toward fruity and floral as it finishes, leaving a baked agave aftertaste.
The Good: Well-balanced nose and body. This is one of the best triple-distilled blancos - it doesn’t smooth out the tequila so much that it completely puts out the fire, nor does it sacrifice flavor.
The Not-so-good: Nothing, a solid A.

Casa Noble Reposado Tasting Notes
The reposado looks like liquid gold. The smell of rich chocolate competes with the sweetness of baked agave, giving way to a subtle scent of creamy caramel. The smell is a little deceiving, as this still-lively tequila confronts the tongue with an earthy woodiness and herbal agave flavor that guides you toward the complimenting flavors from the barrels, which offers everything from oak, tropical fruit, cocoa, caramel, and just a hint of smoke. There is a nice, warm ending that’s reminiscent of the wonderful bouquet, with lingering flavors of agave, chocolate, and caramel. This tequila is wonderfully consistent and balanced, and an absolute pleasure to sip.
The Good: Wonderfully rich flavors from the barrel that are in harmony with the flavors of the tequila.
The Not-so-good: First sip can be a bit “woody” and confrontational.
Tequila Examiner Grade, Casa Noble Reposado: Highly Recommended (A-)
Casa Noble Añejo and Cocktail Mixing Notes
I recall from my tasting at the distillery that Casa Noble makes a superb añejo, however, the samples sent to me for the purposes of writing these tasting notes included two 50ml bottles of the reposado and no añejo, so there will be no waxing poetic about the añejo – on to the cocktails!
The Crystal makes a wonderful, fresh-tasting margarita with strong complimentary flavors from the tequila. Try any of the mouthwatering Casa Noble cocktail recipes that are over at the Mixoloseum (with daring ingredients like Chartreuse, bitters, and ginger) and expect the tequila to hold its own – about 1.5 to 2 ounces of Crystal in the average-sized cocktail is enough to accent the boldest of ingredients with the flavor of Casa Noble."
